PoLoPo develops a molecular farming solution that produces animal proteins directly within potato tubers. Utilizing its proprietary SuperAA technology, the company genetically engineers potato plants to function as biofactories, expressing high levels of target proteins such as Ovalbumin, the primary protein in egg whites. This process allows for the cultivation of bio-identical proteins that are functionally equivalent to their animal-derived counterparts. By leveraging the potato's natural storage capacity, PoLoPo enables the cost-effective and scalable manufacturing of ingredients for the food industry. While the initial focus is on egg protein, the platform is adaptable for synthesizing various other proteins used in dairy alternatives, meat analogs, and infant formulas. This method provides a sustainable supply chain solution for high-demand food ingredients without the need for traditional animal agriculture

The solution addresses decarbonization by decoupling protein production from animal agriculture. Decarbonization: Producing egg protein in plants eliminates the need for industrial chicken farming, significantly reducing the associated greenhouse gas emissions, water consumption, and land use. Adaptation & Resilience: The technology offers a stable, climate-resilient supply chain that is immune to supply shocks common in the egg industry, such as avian flu outbreaks or feed price volatility.

PoLoPo, a company developing technology to grow animal-based protein in potatoes, won first place in the Next Gen Impact competition for women entrepreneurs hosted by Yazamiyot in collaboration with Microsoft, Luzzatto group, KPMG, Ofakim Travel, and Calcalist. Only 30% of the high-tech workforce is female, and the numbers are even lower in entrepreneurship.
